3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed multiple food products cold holding above 41°F in one of the open cold holding grocery units in the front of the store. A hardboiled egg was voluntarily discarded to be temperature checked during the inspection. The egg was temping at over 60°F during the inspection. Please see voluntary condemnation for more details. Discussed with the person in charge about their process for monitoring these open cold holding units. Person in charge said they monitor them throughout the day with temperature logs.
None — 51: 5-205.15(B) Observed ice beginning to buildup on the ceiling and drip in the walk in freezer. Discussed with the person in charge about the potential for contamination if this ice drips onto food products. The person in charge stated that they are aware of the problem and have a work order in to get this fixed.
