Corrective action: Observed pizza in the hot holding unit with an internal temperature of 122 degrees F for less than 4 hours. Spoke with person in charge about proper hot holding temperatures. Water was added to hot hold, and items were brought back up to proper temperatures during inspection.
7-204.11 — Poisonous or toxic materials were not used in accordance with manufacturer's directions.
Corrective action: Observed spray bottle with quaternary ammonia sanitizer with a too high concentration. Spoke with person in charge about proper concentration. Sanitizer was diluted to proper concentration during inspection.
None — 33: 3-501.15(A) Unapproved cooling methods were used. Observed canned mariana sauce cooling the walk in with the lid tightly sealed at 70 degrees for about 45 minutes. Spoke with person in charge about cooling methods. Ice bath was used to cool item down properly during inspection.
4-501.11 — Utensils or equipment were not maintained in good repair or condition.
Corrective action: Observed a large build up of ice in the walk in freezer during inspection. Spoke with person in charge about putting in a work order for this item.
