6-301.14 — Hand washing sinks lacked signs telling employees that they must wash their hands.
Corrective action: Observed no visible signage at the main handwashing sink in the kitchen. Discussed with the person in charge about ensuring the handwashing signage is visible to designate the handwashing sink and ensure staff are washing their hands. Signage was provided during the inspection.
None — 15: 3-302.11(A)(1)-(2) Raw animal foods were not separated from ready-to-eat foods during storage, or preparation, to prevent cross-contamination. Observed raw eggs next to ready-to-eat food items within the walk in. Discussed with the person in charge about the proper storage requirements surrounding raw food items and to sort them based on cook temperatures. Walk in food items were rearranged during the inspection.
3-501.18 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety was not discarded within 7 days of preparation or opening of product.
Corrective action: Observed 1) a small container of BBQ sauce with a date mark past the seven days of reheating. 2) milk that was open for longer than 24 hours without a date mark. Discussed with the person in charge that any food item reheated must be date marked for seven days and went over general date marking recommendations and guidelines. A label was added to the milk during the inspection and the BBQ sauce was discarded, please see the voluntary condemnation.
7-204.11 — Poisonous or toxic materials were not used in accordance with manufacturer's directions.
Corrective action: Observed a chlorine chemical sanitizing solution in the bar reading above 200ppm. Discussed with the person in charge about ensuring that chemical solutions are within the appropriate concentration to prevent a buildup of toxic chemicals. Sanitizer was remade to an appropriate concentration during the inspection.
3-302.12 — Working containers holding food or food ingredients that are removed from their original packages shall be identified with common name.
Corrective action: Observed containers of flour and sugar without a common name in the dry storage area. Discussed with the person in charge about ensuring proper labeling on food items that are taken out of their original packaging. Labels will be added to the containers.
3-304.14 — Wiping cloths were not held in a reasonably clean sanitizer solution of appropriate concentration between use.
Corrective action: Observed a wiping cloth being held in detergent or sitting out on the prep counter during the inspection. Discussed with the person in charge that wiping cloths must be stored in sanitizer in between use to help limit the growth of bacterial pathogens. Wiping cloth was removed during the inspection.
None — 51: 5-205.15(B) The plumbing system was not maintained in good repair. Observed the women's restroom out of order. Discussed with the person in charge that it has a tendency to leak but it is currently scheduled to be fixed. There is another restroom available on site for customers.
