Corrective action: Inspector observed employee food on the food prep line while food was being prepared. Person in charge moved the food to a designated area during the inspection.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Inspector observed the all of the food items in the reach in cooler holding between 60-70 degrees F. Person in charge moved items that had been stored for less than 4 hours into another unit and discarded the items that had been held for over 4 hours. The unit's temperature control was lowered during the inspection. See Voluntary Condemnation.
3-305.12 — (A), and (C)-(I) Food was stored in areas prohibited by the code.
Corrective action: Inspector observed employee foods being stored with consumer foods. Person in charge was instructed to keep employee foods separate and moved the items to the appropriate area during the inspection.
3-304.12 — In-use utensils were improperly stored (without the handle above the top of the food, not on a clean surface, not in running water, or not in water of at least 135°F).
Corrective action: Inspector observed tongs being stored with the handle in contact with shredded lettuce and cut tomatoes. Person in charge moved the tongs into proper position during the inspection.
