3-501.16 — (A)(1) Hot-held foods were holding at less than 135°F.
Corrective action: Observed two bags of nacho cheese hot holding at 105°F for more than four hours. Discussed with the person in charge about their machine and they will call someone in to get it looked at. The machine will not be used until it is repaired, and the opened cheese bags were discarded during the inspection. Please see the voluntary condemnation.
None — 33: 3-501.15(B) Unapproved cooling methods were used. Observed multiple prepared food items cooling with tightly sealed saran wrapping. Discussed with the person in charge that when cooling food items, it is necessary to keep the lid off to assist in the cooling process. The lids were peeled back during the inspection.
3-304.12 — In-use utensils were improperly stored (without the handle above the top of the food, not on a clean surface, not in running water, or not in water of at least 135°F).
Corrective action: Observed multiple scoop utensils laying outside of the food containers in the main kitchen prep area for less than four hours. Discussed with the person in charge that scoops can be put back into the food containers to maintain temperature control and prevent the growth of pathogens. Scoops were placed into their respective food containers during the inspection.
