Corrective action: Cut lettuce and tomatoes were observed holding at 52 - 59 °F in the cold holding unit for less than 4 hours. Person in charge was informed of cold holding parameters and was instructed to discard food at the four-hour mark and to use time as a public health control for this item. Will send application.

Spoke with person in charge about time as a public health control requirements. Will send time as a public health procedure.

Corrective action: Observed the cold holding table for the lettuce and tomatoes at the front not holding proper temperature of 41 degrees F. Spoke with person in charge about this item.

Corrective action: Observed visible light coming through the back door of the kitchen. Spoke to person in charge about a weather stripping in order to keep pests out of establishment.

Corrective action: Observed a buildup of grease along the hood. Spoke with person in charge regarding cleaning frequency for this item.
None — 51: 5-205.15(B) The plumbing system was not maintained in good repair. Observed an active leak from unknown source by the walk-in freezer. Per person in charge a work order has been put in this item to get repaired.

Corrective action: Observed employee items being stored on the food prep table. Spoke with person in charge about a designated area away from food prep for these items. Items were removed during inspection.
