Corrective action: 1.) Observed cut lettuce and cut tomatoes in the cold holding unit with an internal temperature of 45 degrees F for more than 4 hours. 2.) Observed chicken salad and tuna salad in another cold holding unit in the kitchen with an internal temperature of 47 degrees F for more than 4 hours. 3.) Observed cut lettuce and cute tomato in the front sandwich line with an internal temperature of 47 degrees F for less than an hour. Spoke with person in charge regarding temperature logs and to ensure equipment is working properly. Items that were held for more than 4 hours were discarded during inspection and instructed staff to use time as a public health control for other items. See voluntary condemnation.

Corrective action: Spoke with person in charge about a clean surface for cutting bread to reduce the risk of contamination.

Corrective action: Observed employee personal items being stored on the food prep table in the kitchen. Spoke with person in charge about a designated area away from food for these items.
