Corrective action: Can of tomato puree was set aside to return to vendor during inspection.
4-702.11 — Equipment, utensils, and/or food-contact surfaces are not sanitized using approved methods after being cleaned and before use.
Corrective action: Observed dishes being rinsed with water after sanitization instead of allowing dishes to air dry after sanitization. Education offered on approved dish washing procedures to include, wash, rinse, sanitize and air dry only.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed two pots of tomato sauce in the walk-in cooler holding between 45-50°F for an unknown amount of time. Sauce was discarded during inspection, see Voluntary Condemnation.
3-501.18 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed sliced meat and cooked lasagna thawing in the walk-in cooler without a current date mark. Date marking requirements were reviewed during inspection.
7-204.11 — Poisonous or toxic materials were not used in accordance with manufacturer's directions.
Corrective action: Observed the sanitizer solution located next to the pizza prep area testing above 200 ppm. Sanitizer was remade and tested within approved concentration during inspection. A working container storing poisonous or toxic material was found without a label identifying its contents. Observed a spray bottle of degreaser without a current identification label of its content. Label was added during inspection.
3-501.13 — Foods were thawed using an unapproved method.
Corrective action: Observed bags of green chile thawing in a bucket of stagnant water. Education offered on approved thawing techniques and chiles were placed under running water in the prep sink to resume thawing during inspection.

Corrective action: Observed employee food item stored in the prep table by the grill. Observed employee food and miscellaneous items stored on shelving in the dry storage next to establishment ingredients. Education offered on designated areas for employee item storage, items were to be moved.
