None — 9: 3-301.11(B) Employees were observed handling ready-to-eat foods with bare hands. Observed employee handle ready to eat cheese and tortillas with bare hands. Spoke to person in charge about hand washing and glove procedures.
None — 16: 4-501.114(A)-(E),(F)(1)-(2) Chlorine sanitizing solution intended to sanitize food contact surface(s) did not have a concentration between 50-200 ppm along with the corresponding pH and temperature. Sanitizer was measuring 0 PPM at the dish washer. Facility set up a dish washing station at the three compartment sink.

Corrective action: Observed: 1) Sliced ham 2) Shredded cheese 3) Sausage 4) Diced ham temping between 48-58 degrees F in the unit near the grill. 5) Cubed tomatoes all temping between 48-60 degrees F in the walk-in. All items were discarded due to items being out of temperature for greater than four hours.

Corrective action: Observed refrigerator vent near the grill with debris. Spoke to employee about increasing the cleaning frequency of this item.
6-202.14 — A toilet room located on the premises was not completely enclosed and provided with a tight-fitting and self-closing door.
Corrective action: Observed employee restroom inside of the kitchen opened at the beginning of the inspection. Door was closed during inspection.
