3-202.15 — Cans/packaged food containers were dented or damaged.
Corrective action: Observed several cans that were dented in the dry stock area. Discussed with the person in charge about monitoring for dents when they are receiving product and to follow a procedure when one is found. The person in charge said they will try to return the cans. Please see voluntary condemnation.
None — 15: 3-304.15(A) Raw animal foods were not separated from ready-to-eat foods during storage, or preparation, to prevent cross-contamination. Observed shelled eggs and raw bacon being stored next to ready-to-eat food items within the reach-in cold holding unit. Discussed with the person in charge that raw foods should be separated from ready-to-eat food items to prevent possible cross-contamination. Raw food items were moved to the lowest shelf and ready-to-eat food items were moved up a shelf during the inspection. Single-use gloves were used for more than one task and/or after an interruption in operation occurred. Observed an employee take off their gloves to perform a task that required handwashing, and came back to put on the same pair of gloves. Discussed with the person in charge that whenever there is an interruption in the use of single use gloves, that those gloves should be discarded and a new pair is used. The employee discarded the old pair of gloves and grabbed new ones during the inspection.
3-302.12 — Working containers holding food or food ingredients that are removed from their original packages shall be identified with common name.
Corrective action: Observed several tubs of dips and sauces in the reach-in cold holding unit without a label to identify the food with a common name. Discussed with the person in charge that labels are necessary to help prevent possible cross contact of allergens for consumers. Labels will be added to all the tubs.
6-403.11 — Personal belongings were stored in an unapproved area.
Corrective action: Observed several employee food items throughout the facility. Discussed with the person in charge about maintaining a separate bin and location for employee items to prevent possible contamination of consumer products. Personal food items were moved during the inspection.
