3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Inspector observed a bag of shredded cheese cold-holding at 48 °F for less than 4 hours in the cold unit nearest to the flat top. Person in charge moved the cheese to a different unit and cooled the cheese to 41 °F during the inspection.
