Corrective action: Observed multiple pieces of fish that were starting to thaw in the walk in cold holding unit without being opened per instructions on the label. Discussed with the person in charge that vacuum sealed fish must be opened before thawing to prevent the growth of pathogens. Packages were opened during inspection.
