2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Observed an employee use their phone and proceed to go back to handle food prep without a handwash in between. Discussed with the person in charge about the need to wash hands whenever tasks are being changed as to prevent cross contamination. Employee washed their hands before dealing with food prep.
5-205.11 — Hand washing sinks were observed being used for activities that were not hand washing.
Corrective action: Observed a handwashing sink next to the hot holding station with a bucket being used to fill up the steam baths. Discussed with the person in charge that designated handwashing sinks should only be used for handwashing to prevent possible cross contamination. Tub was removed and placed in three comp sink to be washed.
3-202.15 — Cans/packaged food containers were dented or damaged.
Corrective action: Observed two cans with damage along the seam that compromises their integrity. Discussed with the person in charge about their dented can policy and to ensure that any cans with observable damage along the seams should not be used. Cans were discarded during the inspection. Please see the voluntary condemnation below.
7-102.11 — A working container storing poisonous or toxic material was found without a label identifying its contents.
Corrective action: Observed a working container of disinfectant without any identifying information. Discussed with the person in charge that all working containers not holding the original product must be clearly relabeled. The container was relabeled during the inspection.
3-302.12 — Working containers holding food or food ingredients that are removed from their original packages shall be identified with common name.
Corrective action: Observed a big tub of salt without a label identifying its contents. Discussed with the person in charge about the need to maintain labels on food items once they are removed from their original container. A label was added during the inspection.
6-403.11 — Personal belongings were stored in an unapproved area.
Corrective action: Observed personal food items in the walk in cold holding unit on the same shelf as consumer items. Discussed with the person in charge about the need to keep personal items separated from consumer items to prevent possible contamination. Personal items were moved to a designated employee bin on the bottom shelf in the walk in cold holding unit.
