2-301.14 — Employees were observed washing hands in a sink not designated as a hand washing sink.
Corrective action: Inspector observed employee wash their hands in the three compartment sink. Employees were observed failing to wash their hands when required by the code. Inspector observed the employee pick items off the floor and handle raw food and switch back to RTE foods without a handwash. Inspector spoke to person in charge about the proper handwashing requirements when changing task, as well as using the appropriate sinks for handwashing.
None — 10: 5-203.11(A) Handwashing sink does not provide water at a temperature of at least 85 degrees F. Inspector observed the handwashing sink at the front of house did not have hot water. Person in charge had turned of the hot water line due to a small leak and returned hot water to the sink during the inspection. Hand washing sinks are not accessible to food employees. Inspector observed the hand sink in the back of house was not operational. Person in charge had a maintenance personnel come out and begin work on the sink during the inspection.
4-501.115 — Quaternary ammonia sanitizing solution intended to sanitize food contact surface(s) was not in the concentration range specified in the manufacture's required concentration.
Corrective action: Inspector observed the sanitizer in the three-compartment sink was below the required concentration. Person in charge remade the sanitizing solution to the proper concentration.
None — 33: 3-501.15(A) Inspector observed and discussed the current cooling methods with the person in charge. Inspector observed food cooling at room temperature down to 80 degrees and explained the 2-hour requirement to get food from 135 °F to 71°F. Person in charge moved cooling items into the cooler with the lids uncovered during the inspection.
