2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Observed employees not wash their hands 1) after changing out gloves, 2) when leaving the kitchen and re-entering, 3) when changing tasks (i.e. prepping to cleaning dishes). Informed person in charge that hands must be washed when changing tasks, before donning new gloves, and anytime the hands become contaminated.
3-304.12 — In-use utensils were improperly stored (without the handle above the top of the food, not on a clean surface, not in running water, or not in water of at least 135°F).
Corrective action: Observed scoopers stored in the shredded cheese and parmesan cheese in the walk-in refrigerator both with handles not above the food. Scoopers were removed from both cheeses during the inspection.
4-101.19 — Non-food contact surfaces were not designed to be easily cleanable.
Corrective action: Observed multiple areas of grout missing from the tiled floor. Informed person in charge that non-food contact surfaces must be smooth, easily cleanable, and non-absorbent. Person in charge stated they are putting in a work order.
4-602.13 — Nonfood contact surfaces of equipment were not cleaned at a frequency necessary to prevent the accumulation of soil residues.
Corrective action: Observed the outside of multiple cold holding units with a buildup of debris on the doors and handles. Informed person in charge that non-food contact surfaces shall be cleaned to sight and touch and be cleaned more frequently.
6-403.11 — Personal belongings were stored in an unapproved area.
Corrective action: Observed employee drink stored on top of clean pans near the back prep sink. Drink was moved during the inspection.
