Corrective action: Observed residue on the fountain drink nozzles. Reviewed cleaning frequencies of equipment and this will be cleaned daily per person in charge.
3-501.16 — (A)(1) Hot-held foods were holding at less than 135°F.
Corrective action: Observed tornado rolls on the hot roller holding at 130°F for less than four hours per staff member. Time as a public health control was used during inspection as the quality of this food product deteriorates when reheated according to staff. Any leftover product at four hours was to be discarded during inspection.
