None — 2: 2-102.12(A) The person-in-charge was not a Certified Food Protection Manager. Reviewed requirements and how to obtain certification during inspection.
2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Observed employee crack raw shelled eggs and proceed to handle ready to eat burritos without changing gloves or washing hands. Educated employee on when to wash requirements and hands were washed during inspection.
6-301.14 — 1.) Hand washing sinks lacked hand washing supplies as required by the code.
Corrective action: Observed no paper towels at the hand sink in the back across from the walk-in cooler. Paper towels were restocked during inspection. 2.) Hand washing sinks lacked signs telling employees that they must wash their hands in the bathroom. Signage was provided during inspection. 3.) Hand washing sinks were observed being used for activities that were not hand washing. Observed employee use the back hand sink to fill a sanitizer bucket. Educated employee on hand sink usage to ensure that this sink is used for hand washing only.
None — 16: 4-501.114(A)-(E),(F)(1)-(2) Chlorine sanitizing solution intended to sanitize food contact surface(s) did not have a concentration between 50-200 ppm along with the corresponding pH and temperature. Observed the sanitizer solution at the three-compartment sink testing at 25 ppm. Chlorine was added to the concentration and tested within approved limits during inspection.
None — 24: 3-501.19(A),(B)(3),(C)(2) and (3) Time as a public health control was used without written procedures for cooked jalapenos. Guidance regarding written procedures will be provided via email.
3-603.11 — The consumer advisory on the menu did not meet the requirements in the code.
Corrective action: Observed items marked with the consumer advisory * including fish burrito, chorizo plate, and the machaca plate that were not offered raw or undercooked. Reviewed with person in charge consumer advisory requirements and guidance on how to mark menu items correctly.
3-304.12 — In-use utensils were improperly stored (without the handle above the top of the food, not on a clean surface, not in running water, or not in water of at least 135°F).
Corrective action: Observed tong handles stored touching food items on the salsa bar. Tongs were rearranged during inspection so that the handle was not placed in a manner of contamination in between usage.
4-901.11 — Equipment and utensils were not allowed to air dry after cleaning/sanitizing.
Corrective action: Observed employee stacking washed and sanitized pans without allowing for adequate time of these cleaned items to air dry. Educated employee on air drying requirements during inspection and items were allowed to air dry.
