Corrective action: Observed no paper towels at the bar hand washing sink. Paper towels were replaced during inspection.

Observed raw shell eggs on the top shelf of the reach in cooler above ready to eat foods. Eggs were removed during inspection, see Voluntary Condemnation.
3-501.14 — Foods were not cooled from 135°F to 70°F within 2 hours or from 135°F to 41°F within 6 hours.
Corrective action: Observed cooked green chile that was set in refrigeration to complete cooling the night before that was holding at 48°F. Green chile did not reach 41°F withing cooling parameters and was discarded during inspection, see Voluntary Condemnation.
4-302.14 — A test kit or other device that accurately measures the concentration of sanitizing solution was not available at time of inspection.
Corrective action: Observed expired chlorine test strips in the kitchen. New test strips were provided during inspection.
