Corrective action: Inspector observed the cook wipe gloved hands across their apron and proceed to wrap the burritos he was working on. Inspector discussed hand awareness and when to wash hands and change gloves after touching articles of clothing.
6-301.12 — Hand washing sinks lacked hand washing supplies as required by the code.
Corrective action: Inspector observed a handwashing sink without hand drying provisions and discussed supplying the sink with paper towels. The handwashing sink in the adjacent food prep line was fully stocked and available for employees to use.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Inspector observed one container of pork and green chile that was made the day before without a datemark. Inspector discussed the proper datemarking for all food items with the person in charge.
3-304.14 — Wiping cloths were not held in a sanitizer solution of appropriate concentration between use.
Corrective action: Inspector observed a bucket of chlorine bleach testing above 200ppm. Inspector discussed using test strips to ensure the proper concentration before sanitizing surfaces or equipment. Person in charge diluted the solution during the inspection.
