Corrective action: Observed ready made salads in the small refrigerator temping at an internal temperature of 47-50 degrees F for more than 4 hours. Spoke with person in charge about proper cold holding temperatures. Items were discarded during inspection. See voluntary condemnation.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Observed the small salad refrigerator with internal temperatures of 47-50 degrees F and an ambient air temperature of 55 degrees F for an unknown amount of time. Refrigerator had a large buildup of ice along the back. Spoke with person in charge about putting a work order in for this item, and to use the walk in until refrigerator obtains proper temperature.
4-601.11 — (B), and (C) Nonfood contact surfaces of equipment were not kept free of an accumulation of dust, dirt, food residue and other debris.
Corrective action: Observed a build up of dust and debris along the fans of the standing two door cold holding unit. Spoke with person in charge about cleaning frequency for this item.
