None — 2: 2-102.12(A) The person-in-charge was not a Certified Food Protection Manager. Spoke to person in charge about certifying a second individual in the kitchen.
2-301.14 — Employees were observed failing to use the washing procedure required by the code when washing their hands.
Corrective action: Observed employee fail to wash hands after cracking a raw shelled egg and proceed to continue to food prep. Education on hand washing procedures were provided during inspection.
None — 16: 4-501.114(A)-(E),(F)(1)-(2) Quaternary ammonia sanitizing solution intended to sanitize food contact surface(s) was not in the concentration range specified in the manufacture's required concentration. Sanitizer at the bar was below 200 PPM. Inspector spoke to employee about this item. Sanitizer was made with more sanitizer during inspection.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed the following: 1) Salsa temping at at 43-44 degrees F for an unknown amount of time. 2) Two quarts of half and half creamer temping at 47 degrees F or an unknown amount of time. 3) 1/4 of a Ziploc bag of shredded beef. Eggs were observed in refrigeration units with ambient air temperature greater than 45°F. Observed 108 raw shelled eggs temping from 47-49 degrees F. All items were discarded during inspection. See voluntary condemnation.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed: 1) Salsa without a date mark. 2) Shredded cheese without a date mark. Dates were added to items during inspection.
3-603.11 — The consumer advisory in the menu did not meet the requirements in the code.
Corrective action: Consumer advisory did not have asterisks to indicate foods that may be cooked to order.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Observed standing refrigerator temping at 50 degrees. All TCS food items were removed and placed in alternative refrigerators. Spoke to employee about this item. Facility is getting new cold holding units today.
3-302.12 — Working containers holding food or food ingredients that are removed from their original packages shall be identified with common name.
Corrective action: Observed ketchup in different packaging and no label on ketchup. Spoke to employees about this item.
4-501.11 — Equipment components such as doors, seals, hinges, fasteners, and kickplates shall be kept intact, tight and adjusted.
Corrective action: Observed: 1) Freezer seal broken.
6-501.12 — Floors, walls and ceilings were not designed, constructed and installed to be smooth and easily cleanable.
Corrective action: Observed: 1) Baseboard stripping within the kitchen walls peeling off making this not smooth and easily cleanable. 2) Broken tile near and under the grill and under the bar. Spoke to person in charge that all walls and floors needing to be smooth and easily cleanable. Physical facilities were not cleaned as often as necessary to keep them clean. Observed: 1) Buildup of grease, debris, and on floor behind and side of equipment.
