Corrective action: Inspector observed two dented cans of pumpkin pie mix. Person in charge discarded the items during the inspection. See voluntary condemnation.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Inspector observed cut tomatoes, shredded lettuce, and sliced cheese holding at temperatures of 44 - 50 °F for less than 4 hours in the hot line cold holding unit. Person in charge explained that the facility was experiencing issues with their heater and could not get it to reliably shut off. Inspector discussed methods for maintaining appropriate cold holding temperatures with the person in charge. Person in charge removed the top layer of the tomatoes and moved them into the walk-in. Person in charge covered the cheese with lids during the inspection. Person in charge will continue to monitor the cold holding unit and address the heater.
