Corrective action: Observed employees occasionally fail to wash their hands when switching tasks such as working the register or handling dirty dishes and proceeding to don gloves for food prep. Discussed with the person in charge about the need for employees to wash their hands whenever switching from tasks that contaminate their hands and before dealing with food prep.
None — 16: 4-501.114(A)-(E),(F)(1)-(2) Chlorine sanitizing solution intended to sanitize food contact surface(s) did not have a concentration between 50-200 ppm along with the corresponding pH and temperature. Observed the sanitizer in the three compartment sink reading below 50 ppm. Discussed with the person in charge about ensuring that the sanitizer is at the proper concentration to sanitize food contact surfaces. The sanitizer was remade during the inspection to an adequate concentration.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed several food items such as sliced deli meats without a proper date mark indicating when they were prepared. Discussed with the person in charge that any prepared food item that is held for more than 24 hours must have a date mark to ensure it is not kept too long. Labels will be added to the food that is held past 24 hours.
6-501.112 — Dead or trapped birds, insects, rodents or other pests were not removed from the establishment often enough to prevent accumulation, decomposition, or the attraction of pests.
Corrective action: Observed a fly trap that needed to be replaced near the back kitchen door. The person in charge was aware of this and is planning to replace the trap soon.
