2-401.11 — Employee beverages did not meet the requirements in the code.
Corrective action: Observed employee beverages in designated area that did not have a straw and a lid per the code requirements. Discussed with the person in charge that personal beverages need to have a straw and a lid to prevent contamination.
2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Observed 1) employee did not wash their hands after using a sanitizer cloth to wipe down a food contact surface. 2) employee did not wash their hands after handling raw meat and then putting away packages of ready-to-eat foods. Employees were instructed to wash their hands when switching tasks, especially when handling raw foods and switching to ready-to-eat foods. Employees washed their hands after discussion.
6-301.12 — Hand washing sinks lacked hand washing supplies as required by the code.
Corrective action: Observed the main handwashing sink next to the grill without paper towels for hand drying. Discussed with the person in charge about the need to keep hand washing areas adequately supplied with appropriate materials.
None — 15: 3-302.11(A)(1)-(2) Raw animal foods were not separated from ready-to-eat foods during storage, or preparation, to prevent cross-contamination. Observed raw shrimp thawing next to ready to eat food items on the same shelf in the walk in cold holding unit. Discussed with the person in charge that when thawing products it is important to consider their organization once fully thawed. The ready-to-eat food items were moved from the raw items while they were thawing.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed the reach in cold holding unit holding all food items around 44°F for less than four hours. Discussed with the person in charge that temperatures need to be monitored for foods that are cold holding. Food items were moved to the walk in cold holding unit during inspection.
None — 28: 7-202.12(A)(2)-(3), and (B) Observed ammonia sanitizer with a concentration greater than 400ppm. Discussed with the person in charge about maintaining concentration of sanitizer within the acceptable range provided within the code to prevent a buildup of toxic substances. Person in charge will get this fixed through their supplier for the automatic dispensers.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Observed the reach in cold holding unit next to the grill unable to keep foods at the appropriate cold holding temperatures. Multiple food items were cold holding at temperatures around 44°F for less than four hours. Discussed with the person in charge of the importance of checking on the temperature holding capabilities of equipment and to periodically check equipment. The food items were moved to the walk in cold holding unit during the inspection and the person in charge said they will be getting someone out to make sure the items are cold holding appropriately.
3-501.13 — Reduced oxygen packaged fish was not thawed as indicated by a label on the package.
Corrective action: Observed salmon filets fully thawed in the walk in cold holding unit without having been opened before the thawing process started. Discussed with the person in charge about the importance of following the packaging instructions to prevent contamination. The fillets fully thawed were discarded and the remainder had their packages opened. Please see the voluntary condemnation.
3-304.14 — Wiping cloths were not held in a reasonably clean sanitizer solution of appropriate concentration between use.
Corrective action: Observed a sanitizer cloth that was being used to wipe down a prep area not being returned to the sanitizer after use and before the next task. Discussed with the person in charge that these rags must be held in a sanitizer after being used and the rag was placed in the sanitizer bucket.
4-302.14 — A test kit or other device that accurately measures the concentration of sanitizing solution was not available at time of inspection.
Corrective action: Observed test strips for sanitizing solution that were expired. Discussed with the person in charge about the need to maintain test strip supplies and new strips were provided during the inspection.
