Corrective action: Observed employee using sanitizer to clean and then change gloves without a hand wash in between. Spoke with person in charge about ensuring hands are to be washed in between changing tasks.

Observed raw bacon being stored above ready to eat foods in the walk-in cooler. Spoke with person in charge regarding proper storage requirements, Bacon was moved to shelf below during inspection.
None — 16: 4-501.114(A)-(E),(F)(1)-(2) Chlorine sanitizing solution intended to sanitize food contact surface(s) did not have a concentration between 50-200 ppm along with the corresponding pH and temperature. Observed that the auto dishwasher did not have detectable chlorine sanitizer in the final rinse cycle. The facility put in a service call and will manually sanitize clean dishes in the three comp sink until the unit is fixed

Observed opened deli meats, and cooked meats in the walk in being held for more than 24 hours without a date mark. Spoke with person in charge about adding dates to items that are held for more than 24 hours. 2. Refrigerated, ready-to-eat food(s) that require time or temperature control for safety was not discarded within 7 days of preparation or opening of product. Observed half and half and milk in the standing cooler in the kitchen being held for more than 7 days. Spoke with person in charge about disposition for temperature-controlled items of 7 days. Items were discarded during inspection. See voluntary condemnation.

Corrective action: Observed build of grease and food debris behind grill and inside of the dishwasher. Spoke with person in charge about cleaning frequency for this item.
