Corrective action: Observed employee change task multiple times without a handwash step in between (i.e. taking out the trash and re-entering the kitchen). Informed person in charge that hands must be washed when changing tasks, before donning new gloves, and any time the hands become contaminated.
None — 15: 3-302.11(A)(1)-(2) Raw animal foods were not separated from ready-to-eat foods during storage, or preparation, to prevent cross-contamination. Observed re-packaged raw fish and crab stored over ready to eat broccoli in the walk-in freezer. Fish and crab were moved to a lower shelf below the broccoli during the inspection.
None — 16: 4-602.11(A)(1)-(5) Equipment, utensils, and/or food-contact surfaces used in contact with food items that require time/temperature control for safety are not being cleaned at least every 4 hours. Observed employee take a used serving tray and place it with the clean unused serving trays. Informed person in charge that equipment and utensils must be cleaned and sanitized any time contamination may have occurred.
None — 33: 3-501.15(B) Unapproved cooling methods were used. Observed cooked green beans temping between 49-51 degrees F and prepared coleslaw temping at 44 degrees F in the walk-in refrigerator for less than 4 hours. Both food items were wrapped in plastic wrap. Informed person in charge that while cooling, food shall be loosely covered to allow adequate airflow for cooling. Plastic wrap was removed during the inspection.
3-501.13 — Foods were thawed using an unapproved method.
Corrective action: Observed frozen fish thawing on top of the prep sink. Informed person in charge that food must be thawed under refrigeration, or by being completely submerged in running water. Fish was moved to the reach in refrigerator during the inspection.
6-403.11 — Personal belongings were stored in an unapproved area.
Corrective action: Observed employee food stored on the top shelf in the walk-in refrigerator. Informed person in charge that employee belongings must be in a designated area to prevent contamination. Food was moved during the inspection.
