Corrective action: Observed employee handle a burger patty with tongs that was in contact with raw chicken. Person in charge cooked the burger patty to 165 degrees F and designated tongs to only raw chicken.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed 1-gal of milk carton opened more than 24 hours without date marking. Person in charge placed date on carton.
3-304.14 — Wiping cloths were not held in a reasonably clean sanitizer solution of appropriate concentration between use.
Corrective action: Observed several sanitizer rags being stored outside sanitizer solution. Person in charge placed rags in solution during inspection.
