Corrective action: Observed 1) shredded cabbage holding at 44 F, 2) Raw shrimp holding at 47 F, 3) cooked noodles holding at 44 F under 4 hours in the upright cold holding. Person in charge moved items to walk in cooler.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Observed upright cold holding unit holding an ambient air temperature of 44 F. Person in charge will have maintenance performed.
