Corrective action: Observed employee not wash hands between glove changes when working with raw chicken. Informed person in charge that hands must be washed when changing tasks, before donning new gloves, and anytime the hands may become contaminated.
5-205.11 — Hand washing sinks were observed being used for activities that were not hand washing.
Corrective action: Observed employee rinse off the server tray in the server area hand washing sink. Informed person in charge that hand sinks are to be used strictly for handwashing and nothing else.
None — 24: 3-501.19(B)(1),(4),(5),(C)(1),(4),(5) Observed chopped lettuce that was using time as control placed back into the walk-in cooler when the 4-hour time frame was up. Informed person in charge that Food using time as a control needs to be discarded at the 4-hour mark. Lettuce was discarded during the inspection. See voluntary condemnation,
None — 33: 3-501.15(B) Unapproved cooling methods were used. Observed chopped salad cooling in the walk-in refrigerator with the lids on. Salad was temping at 45 degrees F for less than 4 hours. Informed person in charge that when cooling, food shall be uncovered or with loosely fitted lids to allow heat transfer. Lid was removed during the inspection.
3-304.12 — In-use utensils were improperly stored (without the handle above the top of the food, not on a clean surface, not in running water, or not in water of at least 135°F).
Corrective action: Observed 1) a scooper with the handle down in the flour on the fry station, 2) scoopers without a handle stored in the Pico in the front-line reach in refrigerator, 3) scoopers without a handle stored in the frozen vegetables in the reach in freezer. Informed person in charge that handles must be stored above the food. Handles were moved during the inspection.
4-904.11 — Observed single use straws lacking an intact wrapper and being placed in the drinks by the servers.
Corrective action: Informed person in charge that single service articles that are intended for food or lip contact must be furnished for consumer self-service with the original individual wrapper intact. Unwrapped straws were disposed of during the inspection.
