Observed dish machine with a low concentration for sanitizer cycle. Dish machine was primed and at proper concentration during inspection.
3-403.11 — Foods were reheated for longer than 2 hours before reaching 165°F.
Corrective action: Observed hot foods in the warmer temping at 118-123 degrees F for more than 2 hours. Per person in charge items are not reheated to 165 degrees F before putting them in the hot holding. Spoke with person in charge regarding reheating items to 165 degrees F before adding them to the warmer. Items were discarded during inspection. See voluntary condemnation.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed meatballs and cooked chicken in the standing fridges being held for more than 24 hours without a date mark. Spoke with person in charge about date marking requirements for any temperature-controlled item.
None — 24: 3-501.19(A),(B)(3),(C)(2) and (3) Time as a public health control was used without marking foods to indicate when they should be discarded. Observed time as a public health control being used for the shelled eggs in the kitchen. Per person in charge eggs are discarded at 4 hours. Facility has time as a public health control logs but is lacking discard time for eggs. Spoke with person in charge about updating logs to include eggs.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: The standing hot holding unit was temping below 135 degrees F and was dropping at an increased rate with the door open. Foods in the back were at proper temperature, foods in the front were not reaching proper temperature. Spoke with person in charge about putting in a work order for this item.
3-501.13 — Reduced oxygen packaged fish was not thawed as indicated by a label on the package.
Corrective action: Observed vacuum sealed halibut completely thawed without the fish being removed from the package as the package indicates for safe thawing. Spoke with person in charge about verifying with label on thawing methods for vacuum sealed fish. Items were discarded during inspection. See voluntary condemnation.
3-305.11 — Food was stored in areas prohibited by the code.
Corrective action: Observed baked bread being stored on top of the cans in the dry storage area. Spoke with person in charge about storing bread on a separate rack without the potential risk of contamination from the cans. Bread was moved to proper rack during inspection.
