3-202.15 — Cans/packaged food containers were dented or damaged.
Corrective action: Observed several cans received with severe dents that compromised the integrity of the package. Discussed with the person in charge about their dented can policy and the risk associated with using dented cans. Cans were set aside to be returned back to the supplier.
None — 15: 3-304.15(A) Single-use gloves were not discarded when they became soiled and/or damaged. Observed an employee handling raw chicken with their gloved hands and not removing the gloves before grabbing or using utensils to be used for other activities. Discussed with the person in charge that gloves being used must be discarded once they become soiled to prevent the possibility of cross contamination, especially when handling raw meat. Instruction and guidance was provided during the inspection. Raw animal foods were not separated by type to prevent cross-contamination. Observed raw chicken being stored on top of raw pork and next to raw beef. Discussed with the person in charge about ensuring raw animal foods are separated by type to prevent possible cross contamination. Raw animal food items were rearranged during the inspection.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed 1) chopped cabbage in an ice bath opposite the grill with a temperature of 60°F for less than four hours 2) garlic in oil mixture being used at the grill with a temperature higher than 70°F for less than four hours. Discussed with the person in charge that when using an ice bath it is best to fully surround the container in the ice and to limit the amount of product to ensure that it remains at an adequate temperature. Items above were moved to the walk in cold holding unit to cool down or are planned to be discarded within adequate time parameters.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed multiple items in the walk-in refrigerator that did not have a date. Spoke to person and charge and employees about date marking requirements.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Observed the prep area behind the grill unable to adequately cold hold food items at temperatures at or below 41°F. Discussed with the person in charge about the progress on getting it repaired. The technician came in during the inspection to fix the cold holding unit. The machine was not being used to cold hold any items until it was fixed.
3-302.12 — Working containers holding food or food ingredients that are removed from their original packages shall be identified with common name.
Corrective action: Observed several items stored in different containers without a label of the common name.
