Corrective action: Observed lettuce in the cold holding unit in an ice bath with an internal temperature of 50 degrees F for less than 4 hours. Spoke with person in charge about cold holding parameters. More ice was added to properly get down to temperature.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed salsa made the day prior without a date mark. Spoke with person in charge about adding date marks to any temperature controlled item that will be held for more than 24 hours.
6-202.15 — Outer openings were not protected against the entry of pests.
Corrective action: Observed visible light coming in through the back door. Spoke with person in charge about a new weather stripping for the door to prevent the entry of pests.
