Both items had an excessive amount of condensation on the wrap used to cover the item. These two items were discarded due to improper cooling methods. In the walk-in: Observed: 1) Pollo Asado temping at 45 degrees F. Item was completely covered with an excessive amount of condensation on wrap. Spoke to person in charge about proper cooling methods. This item still had time to cool to proper temperature.

Corrective action: Employee food and drink was stored without proper labeling in standing unit. Spoke to person in charge about this item.

Corrective action: Egg items may be cooked to order. Consumer advisory rules and regulations were discussed during inspection.

Corrective action: Chlorine sanitizer was above 200 PPM. Spoke to person in charge about this item. The sanitizer was remade during inspection.

Corrective action: Visible light was coming through the back door. Spoke to person in charge about applying a weather stripping to this door.
